This is one of the first meals our family ate at Robin’s house. She served it with mashed potatoes and toasted Italian bread. I think we all had seconds! –Mellyn Continue reading
This quick dish is a great way to use leftover rice. Serve it warm or cold — as a side or a main course. The light flavor is mild enough that even my picky kids really enjoyed it…unlike the first version that was filled with curry and red pepper! We liked the sweet of the mandarin oranges with it, as well. –Mellyn Continue reading

I have great memories of making this with my aunt when I was a wee one. She’d put the graham crackers in a ziplock bag, and let me dance all over them to make the crumbs. Now my kids beg to do the same thing! –Mellyn Continue reading

These are some of my all-time favorite muffins! I like to double or even triple the batter. It’ll keep for several days in the refrigerator in an airtight container. Don’t stir it after storing –just pour and use. We like them for breakfast with butter and jam or as a side with corn chowder for dinner. The kids also eat them for snacks. Good eats! –Mellyn Continue reading

Yes, I know this sounds “different,” but if you like salmon and lemon together, you should try this. The salmon flavor is so mild and the lemon shines. I was very pleased with the sweet meal it made. Sweet, tangy and on the edge of too sour, this pie is my absolute favorite for Thanksgiving!
Don’t let the long list of ingredients keep you from trying these. They are inspired by a family recipe given to me from my mother-in-law. We can’t live without these special pancakes so I was just determined to make them out of shelf stable ingredients. They do not disappoint. Continue reading
