This cool dessert is really nice on a warm sunny day. Okay we eat it all the time actually. The summer is just an excuse to put this together.
From the recipe box of Grandma C.
- 1 3-oz. box Gelatin Powder, orange or lemon flavor
- ½ cup Boiling Water
- ½ cup Honey
- 1 ½ Tablespoons Lemon Juice
- 1 12-oz. can Evaporated Milk, chilled*
- 18 squares Graham Crackers, or 9 rectangle sheets
DIssolve Gelatin in Boiling Water. Add Honey and Lemon Juice. Mix well. Set aside.In a large bowl whip chilled evaporated milk until soft peaks form. Gently fold in gelatin mixture.
Place 14 of the graham cracker squares on the bottom of a 9 x 13 dish, or enough to make just one even layer of graham crackers in the bottom. Gently, so not to disturb the layer of crackers, pour the gelatin/milk mixture into dish covering graham crackers. Spread evenly. Crush remaining graham crackers and sprinkle on top.
Refrigerate at least one hour, or until set. Store leftovers in the refrigerator.
*Chill evaporated milk by placing can in refrigerator for 4+ hours.
