Apple Pancakes

Don’t let the long list of ingredients keep you from trying these.  They are inspired by a family recipe given to me from my mother-in-law.  We can’t live without these special pancakes so I was just determined to make them out of shelf stable ingredients.  They do not disappoint.

  • 2 cups whole wheat flour
  • 1 teaspoon salt
  • 1 1/2 Tablespoons baking powder
  • 4 Tablespoons sugar 
  • 6 Tablespoons powdered milk
  • 1/2 teaspoon cinnamon
  • 2 Tablespoons egg powder
  • 1/4 cup canola oil
  • 1 1/2 cups Milk
  • 1 cup dried apple slices, placed in a bowl and covered in water

Combine first seven ingredients in a large bowl.  Stir in oil and milk.  Drain water from apple slices and add apples to mixture. Stir well.  Cook on a hot griddle.  Remember to flip!  Serve with. . .


  • 1 cup sugar
  • 3 Tablespoons cornstarch
  • 1 Tablespoon butter powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups apple juice
  • 1 teaspoon lemon juice

Mix dry ingredients well. Add apple juice. Cook over medium heat and
bring to a boil. Remove from heat and add lemon juice.

Note on Butter: Want to use fresh butter today?  No problem.  Just add one tablespoon at the end with the lemon juice.

Note on Powdered Eggs:  Want to use fresh today?  No problem!  Just use 1 large egg for every 2 Tablespoons of egg powder listed above.

Note on milk: Can you make this with powdered milk? You bet! How much powder will simply depend on the brand you use. To simplify things here we will just tell you how much milk you need in each recipe. Mix up a batch and keep it in your fridge to add to all your cooking!

I love how you give the directions for alternative ingredients at the end of the recipes, like real butter for those who don’t have butter powder, or a can of navy beans if you don’t have a grinder, etc. You’ll capture a greater audience that way and those of us who aren’t as “stable” as you are don’t feel left out from trying these cool recipes. Thanks for sharing!
