Mom’s Wheat Bread

 

Yes, this is the famous bread that is pictured at the head of our blog.  I love this recipe for its simplicity and ability to raise beautifully every time I mix a batch.

  • 7 cups Hard White Wheat Flour
  • ⅔ cup Gluten
  • 2 ½ Tablespoons Yeast
  • 5 cups Warm Water
  • 2 Tablespoons Salt
  • ⅔ cup Canola Oil
  • ⅔ cup Honey
  • 2 ½ Tablespoons Lemon Juice
  • 5 cups Hard White Wheat Flour
Mix 7 cups Flour, Gluten, and Yeast in Mixer. Pulse for one minute.Add water. Pulse for one minute.Allow mixture to rest for 10 minutes.

Add Salt, Oil, Honey and Lemon Juice. Mix for one minute.

Continue mixing and add remaining 5 cups Flour. Knead for 10 minutes.

Divide into four pieces.  Shape and put into pans.

Rise 30 minutes, or until loaves have risen to the top of the pans.

Bake at 350 degrees for 27 minutes.
