Lemon Salmon Salad

Cool and refreshing! Great for a fancy summer party. I adapted this from an old tuna salad that my mom had. Yes, I know this sounds “different,” but if you like salmon and lemon together, you should try this. The salmon flavor is so mild and the lemon shines.  I was very pleased with the sweet meal it made.

  • 1 3-oz. box Gelatin Powder, Lemon flavored*
  • ¼ teaspoon Salt
  • 1 cup Boiling Water
  • ½ cup Cold Water
  • 1 Tablespoon Lemon Juice
  • ½ cup Mayonnaise
  • ½ cup Freeze Dried Peas
  • ½ cup Dehydrated Apple Pieces, chopped
  • 1 5-oz. can Salmon, drained
In a small bowl place Peas and Apples. Cover with water to hydrate completely. Drain off extra water. Set aside.Dissolve Gelatin and Salt in boiling water. Blend in Cold Water, Lemon Juice and Mayo. Chill until thick. Fold in Peas, Apples and Salmon. Pour into gelatin mold or serving dishes. Chill until set. Serve cold.
*Sugar Free gelatin may be used. One 0.3-ounce package will do.
