I love peanut butter, and this sauce has just the right balance of sweet and spicy. –Mellyn
- 1 cup crunchy peanut butter
- 1 cup water
- 2 tablespoons lemon juice
- 1 teaspoon ginger
- 1/8 teaspoon crushed red pepper
- 1/2 cup coconut
- In a saucepan, combine peanut butter, water, lemon juice, ginger and crushed red pepper. Stir until smooth.
- Remove from heat and add coconut.
- Serve over noodles or rice.
- Peanuts and/or sesame seeds make a nice garnish!
