Oatmeal Burger Buns

The use of butter powder and egg powder in these rolls make them come together quickly. Oatmeal and wheat flours give them unique texture and flavor.

  • 1 ¾ cups Soft White Wheat Flour
  • ½ cup Rolled Oats
  • ⅓ cup Vital Wheat Gluten
  • 2 Tablespoons Yeast
  • 1 teaspoon Salt
  • 1 ¼ cups Water
  • ¼ cup Honey
  • 4 Tablespoons Butter Powder
  • 2 Tablespoons Whole Egg Powder
In a large mixing bowl, combine flours, oats, gluten, yeast, salt, butter powder and egg powder. In a small saucepan, heat the water and honey to 120-130℉. Add to dry ingredients; knead about 6-8 minutes to form a soft dough. Cover and let rise in a warm place until doubled, about 1 hour.

Punch dough down. Divide into 12 pieces. Shape each into a large ball. Place in a greased cookie sheet and flatten slightly with your hand. Cover and let rise until doubled, about 30 minutes.

Bake at 375℉ for 20-22 minutes or until golden brown. Remove from pan to a wire rack. Slice in half and fill with your favorite “Burger!” Makes 12 buns.
