This skillet meal is full of variety in ingredients and taste. Along with the apples and chicken promised by the title, this dish also features mushrooms, cranberries and onion. It is a sweet and salty combo that we enjoy.
- 12.5 oz. canned chicken, drained and flaked with a fork
- 1 cup Long Grain Rice
- 2 cups water
- ½ cups apple juice
- ½ cup dried apples, chopped
- 4 oz. canned mushrooms, drained
- ½ cup dried onion
- ¼ cup dried cranberries
- 1 teaspoon chicken bouillon paste (or 1 chicken bouillon cubes)
In a large skillet, saute chicken and rice until for 1 minute on high heat.Add the water, bouillon paste, apple juice, apples, mushrooms, onion, cranberries; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender, stirring occasionally.
Note: 1 cup chicken broth may be substituted for 1 cup of the water and the bouillon.
