Cold pasta salads are so satisfying in the heat of summer. This one combines pasta with lentils and parmesan, and it’s perfect served with the parmesan rolls I posted yesterday! –Mellyn
Yields: 4-6 servings
- 1 can Italian stewed tomatoes, drained and rinsed
- 1 cup cooked lentils (1/3 cup dry)
- 4 cups cooked pasta
- 1/4 cup Parmesan cheese
- 1/4-1/2 cup Italian dressing
- Combine tomatoes, lentils and pasta.
- Top with Parmesan cheese and Italian dressing.
- Stir until mixed.
- Chill until ready to serve.
