Lentil Pasta Salad

Cold pasta salads are so satisfying in the heat of summer. This one combines pasta with lentils and parmesan, and it’s perfect served with the parmesan rolls I posted yesterday! –Mellyn

Yields: 4-6 servings

  • 1 can Italian stewed tomatoes, drained and rinsed
  • 1 cup cooked lentils (1/3 cup dry)
  • 4 cups cooked pasta
  • 1/4 cup Parmesan cheese
  • 1/4-1/2 cup Italian dressing
  1. Combine tomatoes, lentils and pasta.
  2. Top with Parmesan cheese and Italian dressing.
  3. Stir until mixed.
  4. Chill until ready to serve.
