Simple Salmon Salad

Food storage is meant to sustain life, but this doesn’t mean it has to be fattening! This is one of my favorite “Light” lunches. When I mix it up this way, I get a high-protein lunch that is filling for under 300 calories. Smart, healthy and food storage! Can it get any better?

  • 1 7-oz. can Salmon, drained
  • 3 Tablespoons Mayonnaise
  • 2 teaspoons Mustard
  • ⅛ teaspoon Celery Salt
  • ⅛ teaspoon Onion Salt
  • 2 cans V-8 Juice
  • 20-30 Crackers, about 200 calories worth

In a small bowl, mix Salmon, Mayo, Mustard, and the Salts. Spoon half of mixture on each of two plates. Serve with V-8 and crackers

NOTE:  If none of my children are interested in eating salmon with me for lunch, (this is rare – they like it as much as I do!) then I just place half of the salmon mix in a bowl and keep it in the fridge for the next day.
