Garden Vegetable Rice

I love being able to throw this side dish together without any chopping or peeling. Using carrots in this dish adds much needed Vitamin A into our diets and my food storage!

  • ¼ cup Dehydrated Carrot Dices
  • 2 Tablespoons Dehydrated Onion
  • 1 ¾ cups Water
  • 1 teaspoon Chicken Bouillon Paste
  • ⅓ cup Rice
  • ¼ teaspoon Salt
  • ¼ teaspoon Ground Pepper
  • 2 cups Freeze Dried Zucchini Slices
Bring water to a boil. Add carrots, onion, bouillon, rice, salt and pepper. Reduce heat; cover and simmer for 13 minutes. Stir in the zucchini. Cover and simmer 6-10 minutes longer or until rice is tender.
