Simple Black Bean & Tomato Filling

Now this is my kind of recipe — 3 ingredients, 3 steps and great results! If you cook your beans ahead (or used canned beans) this filling is ready in a flash. Use it for quesadillas or for tacos. Tomatillo dressing adds some nice flavor, as well. –Mellyn

Yield: 10 tacos or 5 quesadillas

  • 3 cups black beans, cooked (this is about 1 cup dry) or 2 15-ounce cans black beans, drained
  • 1 15-ounce can diced tomatoes
  • 1 tablespoon taco seasoning mix
  1. Combine three cups of cooked black beans with diced tomatoes.
  2. Add taco seasoning. Let simmer.
  3. Serve with homemade tortillas and top with salsa. (If you’ve got it, cheese, avocado, lettuce and sour cream, are yummy, too!)
