Now this is my kind of recipe — 3 ingredients, 3 steps and great results! If you cook your beans ahead (or used canned beans) this filling is ready in a flash. Use it for quesadillas or for tacos. Tomatillo dressing adds some nice flavor, as well. –Mellyn
Yield: 10 tacos or 5 quesadillas
- 3 cups black beans, cooked (this is about 1 cup dry) or 2 15-ounce cans black beans, drained
- 1 15-ounce can diced tomatoes
- 1 tablespoon taco seasoning mix
- Combine three cups of cooked black beans with diced tomatoes.
- Add taco seasoning. Let simmer.
- Serve with homemade tortillas and top with salsa. (If you’ve got it, cheese, avocado, lettuce and sour cream, are yummy, too!)
