- 1/4 cup bean flour
- 1/4 cup wheat flour
- 3/4 cup nonfat dry milk powder
- 2 Tablespoons onion powder
- 2 teaspoons salt
- 5 cups water
- 1 12-ounce can evaporated milk
- 5 cups potatoes
- Whisk bean flour, wheat flour, dry milk powder, onion, salt and water together.
- Stir over medium high heat until mixture begins to thicken.
- Add evaporated milk and stir potatoes in gently.
- Serve with chives, shredded cheese and bacon, if desired.
