Creamy Potato Soup

Potato soup may be the ultimate comfort food. This simple recipe is both easy and satisfying. –Mellyn 

  • 1/4 cup bean flour
  • 1/4 cup wheat flour
  • 3/4 cup nonfat dry milk powder
  • 2 Tablespoons onion powder
  • 2 teaspoons salt
  • 5 cups water
  • 1 12-ounce can evaporated milk
  • 5 cups potatoes
  1. Whisk bean flour, wheat flour, dry milk powder, onion, salt and water together.
  2. Stir over medium high heat until mixture begins to thicken.
  3. Add evaporated milk and stir potatoes in gently.
  4. Serve with chives, shredded cheese and bacon, if desired.
