Growing up, we harvested our potatoes and kept them in the cellar for a constant supply throughout the winter. But having lived in warm climates (without basements) for most of the last 7 years, I’ve had to rethink my thoughts on storing potatoes.

As an alternative, I’ve purchased dehydrated potato slices and cubes from suppliers like Emergency Essentials and Honeyville Farms. Although I prefer to use fresh, I appreciate the convenience of dried potatoes on occasion, and if fresh is ever unavailable, I know we’ll be grateful to have our comfort food.
