Fruit Cocktail Squares

No BUTTER or BEANS! These little babies cook up moist without them. The secret? The fruit cocktail. It does all the moist fluffing we need.

  • 1 ½ cups Sugar
  • ⅓ cup Milk, *
  • 1 15-oz. can Fruit Cocktail, undrained
  • 1 teaspoon Vanilla
  • 2 ¼ cups Soft White Wheat Flour
  • 1 ½ teaspoons Baking Soda
  • 1 teaspoon Salt
  • 4 Tablespoons Egg Powder, **
  • ¼ cup Powdered Sugar
  • ½ teaspoon Ground Cinnamon
Preheat oven to 350℉. In a mixing bowl; cream 1 1/2 cup Sugar and Milk. Add Fruit Cocktail and Vanilla; mix well.In a separate bowl; combine the Flour, Baking Soda, Salt and Egg Powder. Add to the creamed mixture and mix well. Pour into a greased cookie sheet.

Bake for 20-25 minutes or until toothpick inserted comes out clean. Cool for 10 minutes. In a small bowl mix Powdered Sugar and Cinnamon. Sprinkle over batter in cookie sheet. Cut and serve. Makes approximately 28 bars.

*Can you use powdered milk in this recipe? I sure did. I just mix up a large pitcher of it according to the directions on my package and keep it in the fridge. Then I add cup for cup the milk called in every recipe I cook.
**Using fresh today? 2 large eggs work well in this recipe. Omit all of the 1/3 cup milk and cream your eggs with the 1 1/2 cups Sugar in the first step of this recipe if you use fresh eggs.
