Ah, thank you, thank you for telling the health benefits of baking cocoa. Now perhaps I can feel better about the cup of homemade hot cocoa I drink almost every morning. 1 cup 1% milk, 2 1/2 tsp baking cocoa, 4 tsp sugar, 1 tsp vanilla. The recipe calls for 2 Tbsp of sugar, but the guilt was getting to me so I cut it back to 4 tsp. Now I can at least feel good about the cocoa. :)

This looks fantastic and can't wait to try it. However, I have been toying with the idea of using the cocoa mix in the #10 cans from the LDS Cannery. It seems a waste to just use it for hot chocolate. I wonder how easy it might be to just modify a frosting recipe to use this as the sugar and cocoa for a yummy frosting. It might surprise us how simple it would be. Would you be willing to take on this challenge? You appear to be more creative in the kitchen than I am, and you do have more taste testers in your home than I do right now.

I am excited to be able to view your informative site. I would like to know more about bean flours since there seems to be a wide range of concerns related to gastric disorders, especially with raw kidney beans. I have Rita Bingham's book, "Country Beans" and want to incorporate more beans into our foods. Bean flours appear to be a painless way to do so or so I thought at first. -- Thanks for any info you can provide.

We made these for dinner tonight. I know, it's more of a breakfast fare, but I don't get up that early in the morning!! They are absolutely delicious. The only thing I would add is that I would have benefited from a well- floured surface for rolling the dough. I lightly floured some waxed paper and that was not sufficient.
We had enough with two pans to share 3 platefuls with neighbors. What a hit!!! Thanks. :)
(Oh, I was looking for blueberry recipes to use up the gallon and a half that the kids and I picked last week. Your mom recommended that I check this site out. Love it!)
