Bean Melody Salad

This is an easy side dish. It does need time to chill, but it is so simple to assemble that if I have the thought of it in the morning, I only need a moment to have it ready and chilling well before dinner time.  Recipe from Carol.

  • 1 14-oz. can Green Beans, drained
  • 1 14-oz. can Wax Beans, drained
  • 1 14-oz. can Kidney Beans, drained and rinsed
  • ½ cup Freeze Dried Green Bell Pepper Dices
  • ¼ cup Dehydrated Onion
  • ¾ cup Sugar
  • ⅔ cup Vinegar
  • ⅓ cup Canola Oil
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
Place Onion and Green Bell Pepper in a small bowl and cover with water to hydrate completely. Drain of extra water. Drain Green Beans, Wax Beans, and Kidney Beans. Combine with Green Peppers and Onions. Mix Sugar, Vinegar, and Oil. Pour over vegetables. Add Pepper and Salt. Toss. Chill at least 6 hours or overnight.
